Mexican Corn

Mexican Corn
Mexican Corn is one of my favorite summer time snacks. Inspired by Havana Outpost's famous corn, I composed a recipe to make at home (with out a grill).

Mexican Corn
Makes 6 servings

Ingredients:

6 Ears of corn husked 
1/4 Cup Mayo
1/4 Cup Sour Cream
1/4 teaspoon ground Comino
1 cup grated Cotija Cheese
1lime
Salt to taste
Chili powder to taste

Directions:

1. Microwave corn in a covered container for five minutes. After Microwaved place corn on broiler pan in broiler. Cook for five minutes on each side until spotted brown. Use tongs to turn corn.

2. While cooking the corn, mix mayo, sour cream, Comino, and salt in a bowl. Place cheese on a plate.

3. Once corn is done insert corn holders (I used a chop stick). Cover corn with mayo mixture. Roll corn in the cheese coating it. Sprinkle chili powder on the corn and finish with a squirt of lime.

4. Enjoy!

Broiled Corn
Mayo, sour cream, salt, and ground Comino mixture, chili powder,
Cotija cheese, and lime.
