It's hard to find good savory sweet potato recipes, so I had to come up with my own. My goal was to get rid of some ingredients I had around the kitchen and I think it was pretty successful. This definitely makes for a good side but needs a little something extra to hold it's own. You can get the recipe after the break.
Savory Mashed Sweet Potatoes
Ingredients:
2 sweet potatoes
3 sprigs rosemary
1 tbsp butter
1 1/2 cups chicken broth
1/2 large white onion (chopped)
2 large garlic cloves (minced)
1/2 tsp fresh ground nutmeg
salt and pepper to taste
freshly grated parmesan
Directions:
Wash and peel sweet potatoes and cut into large cubes. Place in a large pot, cover with water. Boil the water and potatoes for 10 minutes or until tender. Drain water and set aside in a bowl. Melt butter at medium heat in the pot. Add onions, garlic, and rosemary and cook until onions are translucent. Remove rosemary sprigs with tongs and discard. Add sweet potatoes and chicken broth to the pot cook and for a addtional 5 minutess to combined flavors and cook down the stock. Season with salt, pepper and nutmeg. Turn of heat. Crush potato cubes with a fork of masher. Using an immersion blender roughly blend the potatoes and onions to desired consistency. Scoop onto plates or bowl and garnish with rosemary sprig and freshly grated parmesan.
Makes approximately 3 servings.
