Jalapeno Bacon Deviled Eggs Made with Homemade Mayo

I love deviled eggs but they can be a bit boring. So I decided to try to divise a recipe for a deviled egg that was just a bit more interesting than the classic paprika top variety. Which lead me to create my Jalapeno Bacon Deviled Eggs. I really wanted the taste of the bacon to be really noticeable so the egg mixture is only lightly seasoned. These eggs also have a nice kick to them thanks to the Sriarcha sauce and grated jalapeno. These guys have already been deemed a favorite by the roomies and hopefully soon by you too.

Jalapeno Bacon Deviled Eggs

Ingredients:
12 peeled hard boiled eggs
2 jalapeno peppers
4 slices bacon
2/3 cup homemade mayo (see recipe after the jump) or store bought
1 tbs whole mustard seeds
2 tbs Sriarcha Sauce
salt and pepper

Directions:
Cook bacon in a skillet until crisp. Set a side on a paper towel lined plate and crumble when cooled. 
Cut jalapenos in quarters lengthwise. Remove seeds. Grate with a fine cheese grater over a bowl. Discard jalapeno skins.  
Cut eggs in half length wise and scoop out egg yokes. Add mayo, bacon, mustard, Sriarcha, and salt and pepper to taste. Mix, mashing yokes, with a fork. Spoon into halved egg whites. 
Top with grated jalapenos.  Serve. 


I decided to make my own Mayo for this recipe. It's fairly simple but you may encounter some set backs. It's really important that you constantly have your electric beater going as you slowly and steadily poor in the oil. If you don't you may end up with a clumpy egg and oil mess like the image below. You could salvage this by making double the quantity.  Starting from the beginning and then slowly incorporating you're egg and oil mixture into to the new mixture by the spoonful.


Homemade Mayo

Ingredients:
1  fresh egg
1/2 canola oil
1/2 olive oil
1 tsp white wine vinegar
pinch salt

Directions:
Separate the egg yolk from the whites. Discard the whites and place yolk in a small to medium size bowl. Add vinegar and salt to the bowl. Using a electric beater, at it's lowest setting, whisk the yolk mixture together. Combined oils together in a spouted container. Slowly pour a steady stream of oil into the mixture while constantly beating. The mixture will slowly thicken and emulsify unitl you have your mayo. See image below.
